What is a Sushi Train?

One of the more popular sushi restaurant concepts is train sushi, or also known as kaitenzushi Japan. This concept serves sushi on a conveyor belt that rotates in front of the customers. Besides being practical, train sushi offers a unique and modern dining experience.

If in a conventional sushi restaurant, sushi is delivered by a waiter, then this concept is the opposite. The sushi can come by itself without being delivered by a waiter. Customers are also free to take the sushi they like without having to wait long.

After the chefs have made the sushi and sashimi, they will plate it up and serve it on a conveyor belt that makes its way to the customers’ tables. Customers can snatch up what they want as the sushi plates pass by. Enjoying sushi just got faster and easier.

How Does It Begin?

So, here is the brief story. Kaitenzushi, which means “rotation sushi” in English, was first introduced by a Japanese restaurant owner named Yoshiaki Shiraishi.

Once upon a time, Shiraishi had difficulty finding enough employees. Many employees resigned, overwhelming him with operational management.

Shiraishi wants his business to run efficiently and effectively. He wanted to keep costs down. One day, Shiraishi noticed beer bottles running along the conveyor belt when he was at the Ashai brewery.

Well, he was then inspired to make a similar machine for his business. He wanted the fresh sushi he made to reach customers’ tables quickly without having to involve many employees.

After five years of trial and error, Shiraishi finally succeeded in creating a conveyor belt sushi restaurant called Genroku Sushi in 1958.Since then, his unique restaurant has become very popular.
