So, What is Sushi?
In a nutshell, sushi is a traditional Japanese dish that combines vinegared rice (shari) with various fillings and toppings, which can include vegetables, seafood, or egg. While raw fish is often associated with sushi, not all sushi includes it. There are plenty of cooked and vegetarian options too.
Understanding the main types of sushi can help you make the right choice, such as:
- Maki (sushi rolls): These are rolled in seaweed (nori) with rice and fillings, then sliced into bite-sized rounds. Great for beginners.
- Uramaki: Shaped like maki, but the rice is on the outside of the seaweed, not inside. Often garnished with sesame seeds or roe for added crunch.
- Nigiri: A small hand-formed mound of rice topped with a slice of fish or other protein, often with a hint of wasabi in between.

How to Eat Sushi: A Bit of Etiquette
You don’t need to be an expert in Japanese culture to enjoy sushi respectfully. However, knowing a few etiquette tips can make your experience more enjoyable.
- Hands or chopsticks? Both are acceptable. Nigiri and handrolls are often eaten by hand, while sashimi is eaten with chopsticks.
- Wipe your hands. If you’re provided with an oshibori (rolled wet hand towel), use it before starting your meal. This is especially acceptable to eat most sushi with fingers (except sashimi).
- Don’t drown your sushi. Dip lightly into soy sauce—ideally on the fish side, not the rice, to avoid it falling apart.
- Ginger is for cleansing. The thin slice of pickled ginger (gari) isn’t meant to go on your sushi. It’s there to refresh your palate between bites.
- Wasabi is optional. Some sushi already includes it. Add more if you like spiciness, but use sparingly.
- Pair with the right drinks. For first timers, go with the classic drink pairing option like ocha (green tea), but other beverages such as Japanese beer will elevate your sushi experience too.
